Brian Dilleen runs Mad Yolk Farm, a regenerative egg and vegetable farm in east Galway. Born in Galway city, he first studied construction, then worked in sales for 15 years before deciding to turn to farming. He trained with Richard Perkins of Ridgedale Farm and started his own farm in 2020 with the aim of producing high-quality, local fruit and vegetables using regenerative farming methods.
He quickly branched out into pasture-raised egg production. His farm has now diversified to include a public sauna and event space, a farm shop, and 10 hectares of agroforestry plus 1 hectare of native woodland.
Brian is passionate about using innovative, ecological methods to build a sustainable business while restoring the landscape, sharing his journey to help other farmers transition to local and resilient food production systems.
As a Farming for Nature Ambassador, Brian champions soil health, biological farming, and biodiversity, highlighting the link between good farming and good food.
