About Gypsy
Farmer & Artisan Cheesemaker
Gypsy Gifford is a farmer and cheesemaker at Leitrim Hill Creamery in County Leitrim. With her mother, Lisa Gifford, and her partner, Richelle South, they produce raw milk goat cheese and artisan ice cream made from both goat milk and Jersey milk. Together, they also run The Hidden Corner cheese shop in Carrick-on-Shannon.
Pasture-Based Farming & Production
On their four-and-a-half-acre farm in Drumcong, they focus on small-scale, pasture-based farming, producing whey-fed pork and pasture-raised goat meat alongside their dairy products.
